FAAN`S CURED MEAT IN PANCAKES

Fan`s Cured Meat in Pancakes is one of the traditional Shaanxi delicacies. In fact they are pancakes made of high-quality wheat flour stuffed with cured meat. The popular name among the local people is ¡° pancakes in cured meat .¡±Fan`s cured meat appeared in Xi`an a long time ago, and there is a story about it.

ZENG GAO

Zeng Gao is a traditional snack for breakfast in Central Shaanxi. It is made from glutinous rice and dates in a steamer which is developed from an ancient cooking vessel Zeng, hence the name Zeng Gao. Dates have a lot of medicinal functions such as enriching the blood and calming the nerves and Zeng Gao has a strong flavor of dates and is soft, sticky and tasty.


HULUTOU

Hulutou (Broth With Intestines Aad Tripe), is a local delicacy in Xi`an. Its raw materials are intestine. Before it is served, the customer needs to break the pancake into small pieces, then the chef soaks them in the boiling bone soup three or four times with pork intestine, pork tripe, chicken, sea cucumber and squid on the top. Afterward, lard, and greens are added to it. It is often served with preserved garlic and chili jam.

THE TONG`S CURED MUTTON

The Tong`s Cured Mutton in Xi`an is known for its freshly red color, special taste and softness.Legend has it that in 1900 when the Eight-Power Allied Forces invaded Beijing, Empress Dowager Ci Xi fled to Xi`an with Emperor Guang Xu. One day Ci Xi passed the Western Street in her imperial carriage. While climbing the slope, she caught a strong aromatic smell. The provincial governor told her that the scent came from a restaurant selling mutton and beef. It was called the Tong`s after the name of the owner.

GOLD NOODLES

Cold noodles are a local dish in Southern Shaanxi and Central Shaanxi. The cold noodles made in Central Shaanxi are generally made from the wheat flour through steaming while the cold noodles made in Southern Shaanxi are made from the rice flour through the same process.

Shredded Pancakes in Mutton or Beef Soup is a local Moslem delicacy honored as ¡° a superb dish in Shaanxi .¡± It is originated from mutton and beef custard in ancient times that was listed as royal food in the Western Zhou Dynasty. Poems about it can also be found in Sima Qian`s ¡° Records of the Historian¡± . then in the Song and Yuan dynasties, this delicacy gained even greater popularity because of an increase in the Moslem population in Xi`an.

QISHAN NOODLES WITH INGREDIENTS

Qishan noodles have a long history and became well-known as early as the Qing Dynasty. The ingredients include pork shreds, day lily, egg, wood fungus, and bean curd which are flavored with a variety of spices. Before they are served, the noodles are fist scooped and then mixed with ingrediedients.Qishan noodles originated in Qishan County, hence the name Qishan noodles. When they are served, there is more soup, which tastes sour and hot, than noodles in the bowl.

QIANXIAN GUO KUI

Guo kui, a well-known snack in Qianxian County, is thick in the middle and thin on the verge with designs of the wheel on the surface. It is crisp and tasty and is always a good present for friends and relatives. When it is made, the wheat flour is mixed with a minium amount of water and then backed over low flame so that it is easy to be stored and handy to take because it custom of the local people of Shaanxi to travel with it as their food. Guo Kui is one of the ¡°Ten Strange Features¡± in Central Shaanxi and it is often described as big as a lid of a wok.

BUCKWHEAT NOODLES

Buckwheat noodles are made through pressing the buckwheat flour through the special device with holes. They can be served either hot or could. If it is served could, flavor it with salt, vinegar, mustard, garlic sauce and hot chili. If it is served hot, warm it up in the hot soup and scoop it up and top it with stir-fried vegetables and meat.


Litong Fire-crystal Persimmons

The persimmons grown in Lintong District look as red as fire and as clear as crystal, hence the name Fire-crystal Persimmons. Though persimmons are popular in Shaanxi, the Fire-crystal Persimmons¡ªthe local product in Lintong, rank No.1 in quality. With thin peel and sweet pulp, they are small, fire red, crystal clear, and seedless. Lintong Fire-crystal Persimmons can be used to make wine and vinegar despite their popularity as a fresh fruit. They can also help with stomach problems and constipation, stop bleeding, lower blood pressure for their medicinal property apart from their tonic effect. The pancakes made from the persimmons, soft and tasty, are very popular in Xi`an.

Litong Pomegranate

Pomegranate was originally grown in Central Asia. It is said that it was introduced to China by Zhang Qian when he was sent to the western Regions as an envoy in the western Han Dynasty. It was first grown in the imperial gardens in Chang`an and in the Hot Spring Palace in Lintong. Through 2,000 years of propagation and cultivation, pomegranates are now grown all over the country. But Lintong pomegranates are the most famous. Lintong pomegranates have medicinal property in Chinese medicine while they serve as a fresh fruit. They have curative effect on bacterial dysentery and diarrhea ;they can function as anathematic and bactericide, and can help with digestion as well.

Walnuts in Southern Shaanxi

Walnuts, originally grown in Iran and Afghanistan, were introduced into china by zhang qian, an envoy who was sent to the western Regions in the western Han Dynasty. Though they are widely grown in Southern Shaaxi, the walnuts grown in Shangluo, which are big, thin-shelled and loose-kernelled, enjoy the fame in quality and quantity. The annual production occupies the first place in the country.

The output of Chines kiwi fruit in Shaanxi, with gloss and good quality, ranks No.1 in China. The export products such as kiwi fruit, kiwi juice, and kiwi jam from Shaanxi are very popular at the international market.
